Nose Very complex nose – Delicate – Spicy – Mineral notes – Still dominated by the notes of ageing in wood barrels (hazelnut, coffee, coconut) but the characteristic aromas of Petit Manseng (Ripe fruits – Pineapple) are already coming through.
Mouth Rich, Distinguished, Elegant – Very long finish on the fruits-wood blend sustained by a fine liveliness (acidity) in the background. A harmonious, gastronomic wine.
Food and wine pairing Roquefort omelette, “Garbure”, Trout in butter sauce, Sea-bream or monkfish terrine, “Piperade”, Fricassee of chicken, Cassoulet of beans.
